UPPER WEST SIDE— Gael Greene reports that roving chef Michael Huynh has found a new home in Rain, the UWS restaurant which will be renamed after a huge makeover in 4 months. Apparently his new partners aren't worried: "Undaunted by Huynh’s love’em and leave’em rep, Scher is sure the deal he’s given him will cure the chef's attention-deficit-syndrome. 'We have promised each other we are committed to this project,' Scher says...'We’re going to be 50-50,' Huynh tells a friend. At 43 and recently married, Huynh snaps: 'I need to make money.'" GREENPOINT— Brooklyn Label in Greenpoint is now selling coffee geek favorite, Stumptown coffee. SOHO— Today Steve Lewis gets the scoop on promoter Danny A's new concept for his restaurant downstairs from his lounge 'Upstairs': "Danny...will be opening the downstairs part of Upstairs for late night habitués to munch on quality fare. Thus we have Downstairs, and believe me Downstairs is even more pedestrian than Upstairs, so I expect it to be fab. A dream come true for all of us in the 10023 zip code, if true. Alas, Main Street's Steven Scher says it's only talk so far. Is the fickle Vietnamese cooking star still at Bun SoHo? SOHO/TRIBECA—All at once, Michael Huynh is down to zero restaurants, having just exited both Bun and Mai House, where he had set up shop with Drew Nieporent. Gael Greene has more: "Michael Huynh is out at Bun—couldn’t get along with his partner, he says. Next move: A new noodle shop with new partners in Tribeca on Hudson Street, steps from Mai House where he walked out earlier, never saying he wouldn't be back. 'I'm just opening a little noodle shop for my wife,' he told owner Drew Nieporent, running off to dominate the kitchen at Bun, abandoning the savvy entrepreneur who helped him lift his cooking to new highs of sophistication...As for Bun, 'It's chaos now,' a fan reports."
