David Chang appeared on the Charlie Rose show last night, and Serious Eats has all the clips. Chang plays the usual coy game by saying he's not very special or original and doesn't try to get nor does he deserve the media attention. But the hour long interview is incredibly in depth and worth a watch. Most interesting, of course, is his response when Rose asks if he'll open a place in Vegas: "That's the loaded question. I would say it's pretty good...I'm not ambivalent. It's really hard to do business in New York. What the dining culture doesn't understand is that we're not a food culture like we are in France and Italy and Japan where you can sort of run a restaurant like a mom and pop operation...In New York with all the construction permits...it's hard because these buildings are tough and they're small, and with someone from Las Vegas you have the opportunity to do something fresh and new." Two nights ago Thomas Keller appeared on Charlie Rose and gave a pretty great interview for any Tom, Per Se, or Ratatouille fans. As Eater SF points out, you need to discount Charlie's first question—"What is it you know about cooking?"— but otherwise it's 23 minutes of sweet TK wisdom. In addition to a tour of Per Se, we hear Keller's thoughts on his peers (Grant Achatz, Gordon Ramsay, Mr. Chang), his legacy, his famous dishes (oysters and pearls), and how often a chef needs to be in his kitchen. How often are you in the kitchen? As often as I can be (chuckles)...I started to realize that no longer was the old definition of chef accurate. The old chef had one restaurant, one menu, one kitchen they spent their whole time in.
Whats your favorite meal? Roasted Chicken. It stirs so many emotions in me.
What do you want your legacy to be? I hope my legacy has been impactful to a lot of different people, that has enabled them to help them do their jobs better...from a guest point of view I hope they have memories.
