Here's a video from Nowness which goes deep into the world of Ivan Orkin, the noodle master who recently brought his Tokyo-approved ramen to New York City and published the essential cookbook Ivan Ramen. In the video below, Orkin talks about how "every ingredient contributes to the perfect bowl" and walks through each component of his Shio ramen, from the custom-made noodles to the barely cooked egg to the imported salt blend he uses.
Orkin also explains how he became a hit in Tokyo, and how important it was for him to get it right from the get-go: "The hook was that I'm a white guy making ramen, and I knew people were going to come check me out. I also knew that if I didn't nail it the first time, people would have walked out and never ever come back." Go, watch:
