Last night on Jimmy Kimmel Live, celebrated Florida chef Norman Van Aken stopped by to promote his memoir No Experience Necessary and to make corn dogs. Because his memoir is apparently chock-full of fistfights, Aken regales host Jimmy Kimmel and actor Andy Garcia with stories of fighting various front of house staffers and industry types. In one such fight, he banded together with Charlie Trotter and Emeril Lagasse to fight a maitre d'; Lagasse even smashed chairs against the bar. (Kimmel, understandably asks, "Does he yell 'BAM' when he smashes chairs against the bar?") The three men go on to make spring rolls and corn dogs, in honor of the fact that when Van Aken got his start doing double duty as a short order cook and a carnival worker. Go, watch:
