Biscuit Head in Asheville, North Carolina wants you to pair your gigantic biscuits with a gravy flight, AKA three different gravies from their unique selection. Chef/owner Jason Roy, of Lexington Ave Brewery, and his wife always dreamed of opening a brunch spot that served biscuits "as big as a cat's head." Thus, Biscuit Head was born in the Spring of 2013 and the gravy flight, spotted by @phillygirl, was launched three months ago. Biscuits and gravy are hardly an unlikely pairing, but Biscuit Head serves up unique gravies daily, making your gravy flight choices all the more difficult to make.
Here's the deal: $7 for three gravies. Choose from a variety including espresso red eye, sweet potato coconut, smoked tomato creople, local pork sausage, or the gravy of the day. Rejoice vegetarians, there's also house-made seitan gravy on the lineup. The Gurgling Cod cites the gravy flight as an example of the "Brooklynification of North Carolina," writing: "[A]t this rate, soon there will be a young man who says 'gravy sommelier' when you ask him what he does for a living."
