Welcome to the international edition of the Eater Fall Cookbook and Food Book Preview. Here you will find Fall releases from around the world (September 1 to December 31) that are about, written by, or could be useful to chefs/restaurants. Release dates on the books in this section are taken from Amazon and in some cases may be the US distribution date as opposed to the release date in their home countries. Any Canadian, British, Australian, or other English-language publishers who don't see their books listed, feel free to email your titles and they'll be added. You can find the US releases over here.

Ottolenghi: The Cookbook

This is bestselling cookbook author/London restaurateur Yotam Ottolenghi's first cookbook, which was released in the UK in 2008 but is just getting a release stateside. The book contains recipes from the four locations of his eponymous London restaurant; you can check out a preview here.

The Curious Bartender: The Artistry and Alchemy of Creating the Perfect Cocktail

London bartender Tristan Stephenson (Purl, the Worship Street Whistling Shop, Dachs & Sons) goes deep on explaining why classic cocktails work and then "reinvents each drink from his laboratory, adding contemporary twists to breathe fresh life into these vintage classics." Do all British bartenders have laboratories? Anyway, no word on US availability at this time but keep an eye out for this one.

Roast

London restaurant Roast focuses on local ingredients and British cooking, so expect lots of "fish, poultry, lamb, mutton, goat, pork, beef, game and vegetables, plus many ideas for British puddings." The foreword is by London restaurateur Iqbal Wahhab; recipes by head chef Marcus Verberne.

Historic Heston

This is definitely one of the biggest, shiniest, and (yes) expensive cookbooks coming out this Fall. A proper sequel to Blumenthal's 2008 opus The Big Fat Duck Cookbook, Historic Heston will draw from both of Blumenthal's showcase restaurants, The Fat Duck (Bray) and Dinner (London), to tell the story of British food across several centuries. Feasting with Bompas & Parr: Powerful Recipes & Savage Tales of Food for Feasting

Famous UK "jellists" Bompas and Parr are back with another cookbook. In their own words, the book is "so hairy and muscular it includes an investigation into spontaneous combustion, glitter ham, a chronicle of feasting since the dawn of time, phallic ice sculptures, techniques for feeding 8 to 33,000 people." You were going to have 33,000 people over for a casual dinner next weekend, weren't you?

The Food of Vietnam

Sydney chef Luke Nguyen grew up in the city's "Little Vietnam" neighborhood of Cabramatta. His restaurant, Red Lantern, opened when Nguyen was just 23, and he has since gone on to host a number of TV shows including the first season of MasterChef Australia. This book is a survey of Vietnam's regional cuisines.

Salt Grill: Fine Dining For the Whole Family

Here's the cookbook for famed Sydney chef Luke Mangan's Salt Grill, which has locations in Australia, Jakarta, Bali, Tokyo (which is technically just Salt) and Singapore. The book offers recipes "from seafood tapas to baked lemon sole with prawns & chorizo to the famous Salt salad (seasonal baby vegetables, slow poached hen s egg, buffalo mozzarella and candied walnut)."

Recipes for a Good Time
By Ben Milgate and Elvis Abrahanowicz
You perhaps recognize Ben Milgate and Elvis Abrahanowicz and their Sydney restaurant Porteno from No Reservations, in which Anthony Bourdain described the restaurant as "It's all these young chefs saying fuck it, I'm going throw a lot of really good shit on a board." The restaurant serves Argentinean-influenced food, so expect lots of meat and fire.

Italian Food

Stefano Manfredi is known as the "godfather of Italian food" in Australia, and this whopping 500 recipe cookbook is his biggest production yet. 500 recipes is a lot of recipes — most books on this list have about 100 — so this is something of an epic cookbook. The publishing language compares it to David Thompson's Thai Food, which means they're banking on it being a big hit.

Here's a big glossy chef's book from France's only three Michelin-starred female chef, Anne-Sophie Pic. The New York Times got a sneak peek of her first English language cookbook: "It's as much an art book as a practical guide; Pic explained that she doesn't expect home cooks to replicate her recipes." Bonus: it comes with a laser-cut slip cover.

Cookbook author Anne Willan's memoir will be chock full of the big names of food in the 1970s: Julia Child, James Beard, Simone Beck, Craig Claiborne, Richard Olney, and others. One Soufflé at a Time follows Willan's cooking school from Paris and later to Burgundy.

Provence, 1970: M.F.K. Fisher, Julia Child, James Beard, and the Reinvention of American Taste

What's that? You didn't get enough 1970s French cooking from the Anne Willan memoir? Here's an American-focused history of the winter of 1970, when James Beard, M.F.K. Fisher, Julia Child, Richard Olney, Simone Beck, and Judith Jones all hung out in Provence and discussed food. The book references a collection of notes taken by Fisher which were later discovered by her great nephew.

The Art of French Pastry

Pastry chef Jacquy Pfeiffer is the co-founder of Chicago's French Pastry School, and this book teaches the fundamentals of French pastry. (There are some Alsatian treats thrown in for good measure.) Recipes are written with weights for ingredients instead of volume, although there is "a look at their equivalent in U.S. units."

Fine French Desserts: Essential Recipes and Techniques

This is a survey of traditional pastry written by three culinary school instructors. 250 recipes for "crème brûlée, Black Forest cake, clafoutis, lemon meringue pie, profiteroles, frozen raspberry soufflé, Opéra, tarte tatin, crêpes Suzette, macaroons, gingerbread, strawberry-cherry gazpacho, mango-pineapple carpaccio, fruit taboulé, Christmas log, and sugar decorations."

World-Class Swedish Cooking: Artisanal Recipes from One of Stockholm's Most Celebrated Restaurants

Time for Scandinavian restaurants outside of Copenhagen to get their turn: here's the cookbook from Stockholm's two Michelin-starred restaurant, Frantzén/Lindeberg, which also happens to be #12 on the World's 50 Best List. The book focuses on "season-conscious ingredients" which the publisher's description says will "infuse some top-notch Swedish fun into your kitchen!" So, you know, that sounds neat.

Phaidon is tripling up on this, Noma chef René Redzepi's third cookbook. One volume is a traditional cookbook; one is a journal that explores "creativity, innovation, and the meaning of success"; the third is a small book of snapshots from the restaurant. Check out a sneak peek of the book here.

Sausage!: How to Make and Serve Delicious Homemade Chorizo, Bratwurst, Sobrasada, and More

According to the authors of Sausage, Stockholm chef Johan Åkerberg and cookbook author Jesper Lindberg, "if you can make a hamburger, you can make a sausage." (This is apparently a saying?) In any case, they're ready to teach you how to make everything from cheesedogs to venison sausages to something called "Moose on the Loose."

Pizza: Seasonal Recipes from Rome's Legendary Pizzarium

Pizzaiolo Gabriele Bonci's Roman pizzeria, which you may know from Anthony Bourdain's The Layover (Bourdain on the pizza: "This is magic, I can tell"), is famous for unconventional takes on the traditional dish. Look for topping combinations like "pizza with grilled peaches and chicory; potatoes, eggplant, and rosemary 'ash'; asparagus, egg, and lemon; endive, olives, and anchovies" and something called "sandwich pizza."
