British food writer Tim Hayward interviewed Ferran Adrià about the just-opened open elBulli exhibit at London's Somerset House, and they discussed Adrià's future projects. The upcoming elBulli Foundation — which will "likely [launch] in 2015" — was created to continue the shuttered restaurant's legacy: "A project like elBulli needed to continue, [but] the only real way to continue for years and years was as a foundation." Hayward points out that it almost seems like elBulli is becoming a virtual restaurant, to which Adrià replies: "If you're a chef you always have to work in a restaurant. Why do you have to do that? That's the question I've been asking myself for the last 10 years of my working life."
Later, they discuss La Bullipedia, the forthcoming ingredient-centric Google-meets-Wikipedia digital resource, and Adrià insists that "the death of the book" is on its way. They eventually loop back to the exhibit, which Adrià hopes will "open up a new world for many people ... [to] form new ideas about food outside the restaurant environment." Watch:
