Chef and Hannibal culinary advisor José Andrés will be permanently reopening the former pop-up restaurant America Eats Tavern this November at the Tysons Corner Ritz-Carlton outside of DC. The America Eats Tavern version 2.0 will be a more suburban-friendly version of the 2011 restaurant created to accompany National Archives exhibit, "What's Cooking, Uncle Sam?" (it closed last July).
According to ThinkFoodGroup's press release, the restaurant will offer a "new take on American classics," a "splendid culinary expedition of traditional and innovative dishes inspired by the ingredients of the region." Andrés tells the Washington Post, albeit with less adjectives, that the menu will be "emphasizing wines, oysters, cheeses, meats, beers, blue crabs and other products from the Virginia, Maryland and Pennsylvania area." America Eats Tavern, named after the Works Progress Administration (WPA) Writers Project of the 1930s, was initially located in the Penn Quarter District of Washington DC. The original restaurant was a temporary collaboration with the Foundation for the National Archives that lasted from July 2011 – July 2012.
