Two former Noma sous chefs, Samuel Nutter and Victor Wagman, have just announced plans to open a new restaurant, Bror, in the heart of Copenhagen, Denmark next month. Not many details are currently available, but they've been active on Twitter and Facebook in the last few days, posting enthusiastic updates on the build-out of the space, located on St. Peter's Street.
The photos show a bi-level restaurant with a backyard that could potentially be used for outdoor seating in the warmer months of the year. Another update shows that the restaurant will be growing its own vegetables on the small Sejerø Island.
The news comes just two months after the announcement that Matt Orlando, Noma's longtime head chef, would be leaving the restaurant to open his own place, Amass, on the harbor in Copenhagen. More information on Bror as it becomes available, but safe to say you can add it to the list of restaurants from former Noma stalwarts — like Christian Puglisi and Orlando — that will continue to beef up Copenhagen's restaurant scene.
