Chef Danny Bowien of Mission Chinese Food, which expanded from San Francisco to New York last May, talks about his inspiration in a new video from Nowness. Holding court at neighborhood eatery Spicy Village, near his Lower East Side restaurant, Bowien explains how he doesn't "really have any traditional Chinese training, so a lot of it is just picking the dish apart, tasting it, fucking it up, and then coming back here and eating it again and trying to find out how they do it."
