Here's the cookbook for San Francisco restaurant SPQR: SPQR: Modern Italian Food and Wine, written by co-owner Shelley Lindgren, chef Matthew Accarrino, and co-written by cookbook author Kate Leahy (she of Paul Virant's Preservation Kitchen, among other books). SPQR stands for "Senatus Populusque Romanus," or the Senate and the People of Rome, and was stamped on all manner of official documents back in the ancient Roman empire. (The book calls it "a proclamation of Roman democracy.")
SPQR is not a restaurant cookbook (Caesar forbid), but rather "a slow-paced passeggiata, an Italian stroll" through North and Central Italy. Just because these aren't the restaurant's actual recipes, though, don't expect them to be entry level: time to whip out that pasta roller, stuff some quails with farro, and get a rabbit roulade going. Each chapter explores the wines of a region, followed by Accarrino's recipes. Below, an excerpt of the book. SPQR is out now from Ten Speed Press (buy on Amazon).
