Chef Josiah Citrin of Melisse in Santa Monica stopped by Google to give a talk (and, somewhat rare for Google talks, a cooking demo) about his new book, In Pursuit of Excellence. Below, in just under an hour, Citrin discusses the influence of Ferran Adrià, makes some mushroom soup, and talks about how personalities, not kitchen skills, make celebrity chefs.
