Wait, wait, these are no dowdy vegan soups or ho-hum stir fries: Nguyen deep fries the stuff, serves it with pork belly, and even uses it to make fudge. She also explains the varieties (tofu pudding, anyone?) and explains in great detail how to make most of them at home, in case you're ever inspired to get your homemade fermented tofu on. A fantastic fresh take on an ingredient that is, frankly, overlooked far too frequently.
