Husk's Sean Brock is among the 16 chefs featured in Notes From a Kitchen, an "emotional cookbook" that explores the creative process of chefs in part by using photographs of their chefs' notebooks. Here now, Brock talks about allowing the authors to see his private notebooks that "are almost like journals, almost like a diary." He also discusses the importance of documenting absolutely everything: "The way I see things, it's all dreams until it's on paper. And once it's on paper, it's a reality and it's there for you to be reminded constantly of things that always fly through your head. It's this whirlwind of thoughts and creativity and inspiration and ideas at all times. If you don't record them then you risk that possibility of losing them."
