Last night on Iron Chef America, chef Ashley Christensen (Poole's Diner, Raleigh, NC) challenged Bobby Flay. The secret ingredient: chum salmon. The judges were seafood expert Ben Sargent, actress Cady Huffman, and author and professional cranky pants Jeffrey Steingarten. Christensen mainly showcased techniques from her restaurant, and also made a chum salmon skin beignet. Bobby Flay had some setbacks and had some fun back-and-forth with Steingarten who said Flay's cedar plank-cooked salmon "tasted like house siding."
