This week we head to Washington, D.C. — a city soon to be under the Eater purview — and select ten newish locales that have been garnering serious buzz. This time around, we've been fortunate enough to consult Washington Post food critic Tom Sietsema, who has selected a number of his favorites and shared his thoughts on them. We, too, have thrown in some worth a look.
This undertaking has revealed several trends: The H St. NE stretch keeps getting hotter and hotter with places like Toyland and Ethiopic, there're more new Italian than the city can maybe handle (with chef Fabio Trabocchi's return still to come), and curiously, as Tom told us, "DC has become a magnet for New York and other major food market talent. Cases in point: Chefs Kyle Bailey and his wife Tiffany MacIsaac, previously of Allen & Delancey in NYC, now at the beer-themed Birch & Barley."
