Two Is a Trend: Potato Wars

2008_03_bakedpotatoes.jpgThis just in over the wire: "New York’s first gourmet Baked and Stuffed Potato Bar is slated to open its doors on Monday, March 31st. totally baked...is the brain child of 38 year old, food/business entrepreneur, Jason Apfelbaum...'I’ve wanted to bring this concept to life for some time, said Apfelbaum, and with the United Nations citing 2008 as the International Year of the Potato, I knew the time had come to make this happen! The time of the baked potato is now!'" That press release would be slightly amusing but mostly forgettable if it weren't for the fact there's already a baked potato restaurant in town, NY Stuffed Idaho that is equally ridiculous in both concept and price point (at both places you can spend upwards of $10 on a potato). The first sane thought when confronted with these restaurant concepts is that nothing will come of them. But maybe, just maybe, the time of the potato has come, and like mac 'n' cheese before it, will enjoy a renaissance of sorts. Expect potato street carts and $20 truffled potatoes in high end restaurants within the year.
