According to a piece in Radar today, escoalar a.k.a. butterfish, Hawaiian walu, and "the foie gras of fish" is what New York diners should really be looking out for. Found in high end seafood joints throughout the city (including Le Bernadin), she's been linked to a number of gastrointestinal disturbances. Sayeth Radar: "...escolar is laden with an overwhelming amount of wax esters, just like the ones found in notorious olestra, the original ruinous food additive found in Wow! chips and other miracle fat-reducing snacks of the late-'90s. Dr. Reichelderfer explains that the 20 percent wax ester content found in escolar causes the orange, oily discharge." Don't worry, there are more graphic details in the rest of the piece. [Radar]
